Basic Maintenance for a Commercial Fryer to Make it Last Longer

Being such a heavily used machine, fryer breakdowns (especially thermostat failures or burned-out heating elements) are one of the most common HORECA emergencies. Here we explain how to extend its lifespan.
### 1. Daily oil filtering Breadcrumbs and flour that fall to the bottom of the vat burn constantly. This "carbon" not only gives the oil a bad taste but also sticks to the electrical heating elements, creating an insulating layer. If the element is covered in carbon, it will take longer to heat, consume more electricity, and eventually burn out from overheating. Filter the oil every night.
### 2. Vat cleaning (Boiling out) Once a week, empty the oil and fill the fryer with water and a specific fryer detergent. Turn it on and let it boil (at about 90ºC, never full blast) for 15-20 minutes. This will loosen all the encrusted grease without the need to scrub with scouring pads that damage the metal or the sensors.
### 3. Careful with the safety thermostat Inside the vat, next to the heating element, you will see small metal tubes. These are the thermostat bulbs (the working one and the safety one). They are extremely delicate. If you hit or bend them while cleaning, the fryer won't know the oil temperature and, for safety, will lock out and not turn on.
### 4. Never turn on empty It seems obvious, but turning on the fryer before adding oil will burn out the heating elements in a matter of seconds.
